La città di Gorizia è da sempre crocevia di culture gastronomiche: da quella latina, a quella della Repubblica di Venezia, dall’influsso mitteleuropeo degli Asburgo a quello dei mercanti greci, turchi, libanesi presenti a Trieste e infine degli Ebrei. Questi incontri di civiltà hanno dato origine a interessanti contaminazioni che Gorizia ha poi saputo fondere e rielaborare nel proprio patrimonio gastronomico.
